Mom’s Zucchini Bread

I got this recipe from my mom, and it is called Mom’s Zucchini Bread.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Instructions

Preheat oven to 325F. Grease and flour two bread pans. With a sifter combine four, salt baking powder, soda and cinnamon in a bowl. Beat eggs, vanilla, oil and sugar. Add dry ingredients to the creamed mixture. Stir in nuts and zucchini until combined well. Pour into pans and bake 40 to 60 minutes.

Notes:

I overcooked mine, but it was still good. The one pictured above is a loaf my mom gave me. Hers looked browner to me, so I kept waiting for mine to brown up – hence the overcooking. As to why it was lighter in color. Well, I decided to make only half the recipe. Everything was fine until I got to the part where it said 3 eggs…

It’s quite good, though Mom’s was better. Next time I will just make the whole recipe and give one loaf away like Mom did. I guess Mother knows best when it comes to Mom’s Zucchini Bread!

    I made the bread and it was a hit… My kids even ate it…I like it warmed up with a bit of butter.. Yummy!

    Freeze your extra loaf. They freeze beautifully and taste even better after thawing!

    We have made this twice with zucchini from our garden. It is wonderful! I added a splash of milk (my batter was really thick) and white chocolate chips. This is definitely going on my favorites list.

    I just pulled my bread out of the oven it smells so good i can not wait for it to cool off some so i can eat some my first time making any type of bread from scratch

      Congratulations! I love it with butter or cream cheese (or nothing). It’s almost like cake to me.

    I made this yesterday & it sunk in the middle. I used two loaf pans. What did I do wrong? My family said it was delicious but it wasn’t very pretty.

    Made this wonderful loaf yesterday. I substituted 1c. of applesauce instead of 1c of vegetable oil and it turned out GREAT!!!! Our new Favourite!!! Thanks for the recipe :)

    Substituted apple sauce for oil, but otherwise the best zucchini bread I’ve ever had! Love the cinnamon.

    Love this recipe! Want to try it without the walnuts though, will that affect it?
