Stir-Fried Beef with Broccoli

Let me just start with…your welcome.

Next time you get a hankering for (Americanized) Chinese food, make this. It might seem complicated, but once you have made it one time you won’t think so. And you will know what you get at the end of it, so you will be motivated to make it again and again. Enjoy!

Ingredients List:

  • 1 small package of fresh mushrooms, sliced
  • 1 lb beef flank or tenderloin steak (make it with filet, and it will rock your world)
  • 1-1/2 lbs broccoli
  • 1 tsp finely ginger root, finely chopped
  • 1 can chicken broth
  • white pepper
  • vegetable oil
  • corn starch
  • salt
  • sugar
  • soy sauce
  • 1/4 cup oyster sauce (I use 1/3 cup soy sauce instead)
  1. In a small bowl mix 1 tbsp veg oil, 1 tsp cornstarch, 1 tsp salt, 1 tsp sugar, 1 tsp soy sauce and 1/8 tsp white pepper.
  2. Trim the fat from the beef. Cut it into bite-size pieces.  Mix with marinade above and put in fridge for 20 minutes.
  3. Cut broccoli into 1″ pieces. place broccoli into boiling water and cook 1 minute. Drain and immediately rinse it in cold running water. Drain again.
  4. Mix oyster sauce and 4 tbsp corn starch and set aside (this is the cornstarch mixture).

Heat wok and add 3 tbsp veg oil and add beef and ginger root. Stir fry until the beef is brown (about 3 minutes). Remove beef from wok. Add 2 tbsp veg oil then add mushrooms and stir fry until cooked. Add broccoli, 1/2 tsp salt and stir fry 1 minute. Stir in chicken broth and heat to boiling. Stir in beef and heat to boiling. Add cornstarch mixture and cook until thickened. Serve over rice.

    Wow, look at that poor recipe! Tiime to invest in a recipe notebook! This one sounds good — I’ll have to see if my girls will go for it!
