Easy Summer Spinach Pecan Salad Recipe

Can you wing it in the kitchen? You know, throw ingredients together and whip up a meal? I…cannot. In fact,  Left to my own devices my kids end up saying things like, “Is this dinner?”

But I do have one thing I made up that I (and even other people!) like. It’s a spinach salad that is very easy and absolutely delicious. If you don’t love spinach, but want to make yourself eat some, give this a whirl.

Ingredients

  • Baby spinach
  • Pecan pieces
  • Craisins
  • pat of butter
  • 1/2 tsp. sugar
  • bacon bits
  • mandarin oranges or pears
  • raspberry vinaigrette dressing

Directions

Put baby spinach in a bowl and add Craisins and bacon bits. Next, put a couple spoonfuls of pecan pieces in a pan with a pat of butter and warm them over low heat. Then sprinkle with a little bit of sugar. Add that to the salad along with mandarin oranges or pears and dressing. And voila! Super yummy spinach salad.

Will my kid eat it? Um, no. But that’s okay. More for me.
