A Nugget Surprise

So, I have been looking for healthier food options for my family. My health-nut niece suggested Bocca Meatless Chick’n Nuggets. (I know, sounds narsty, doesn’t it?) But, to my surprise, I gave it a whirl and my kids absolutely loved them and even asked for seconds!

A 10 oz package was $3.99 and the nuggets are made of soy. Honestly, I thought they would be in our freezer until the end of time, but I’m happy to report it wasn’t a waste at all.

Now I have another quick and healthy food option at my fingertips.

Easy and healthy. Yay!

I highly recommend the Boca spick chicken patty (soy). They are yum-o!

We love the Boca and Morningstar products. Simone eats soy crumble tacos, potatoes with soy sausage crumbles and they both like the nuggets! We make easy chicken parm with the patties too!

Isn’t it great when you find healthy options!
    Have a great 4th!

Um, honestly, soy crumbles sound revolting. But after our positive experience with the soy nuggets, I am willing to try some new things. We’ll give it a whirl and I’ll let you know how it goes.

Hooray! See! I knew you would love them…wait, did you try them or just pass them to the kiddos?

Actually, no, I didn’t. They ate all the ones I cooked.

Great idea. We use the Morningstar breakfast sausage links and the girls eat them up! Also, for seriously easy meals, you must check out the simmer sauces at Trader Joes. I either buy a rotisserie chicken from the grocery store and pull off all the meat, or I just bake chicken breasts with nothing more than salt, pepper and a little olive oil; then cut them in small pieces. Put that meat in a Ziploc and save it for a night you’re pressed for time. Really easy to do, and then the next day or later in the week, throw some of that chicken in the pan, pour in a simmer sauce, like yellow curry, chicken cacciatore, punjab spinach sauce, or thai green curry, and let it come together for maybe 10 minutes or so. In the meantime, throw a bag of Uncle Ben’s 90 second rice in the microwave and steam some broccoli. Dinner is served in 10 minutes!
