Simple (But Delicious) Artichoke Dip

Do you like artichokes? If so, this dip is definitely one you should try. Next time you are at the grocery store, pick up a can of Progresso actichoke hearts and you will find this recipe on the back. It’s REALLY good. And I like it when the recipe is at the store – because that’s one less thing to think about.

Ingredients:

1 can (14 oz.)  artichoke hearts, drained, chopped
3/4 cup  mayonnaise
1/4 cup grated Parmesan cheese
1/2 tsp lemon juice
dash of garlic powder

Directions:

Heat oven to 350 F.  Mix ingredients in a medium bow. Spread in an ungreased shallow casserole dish. Bake 25 to 30 minutes. Serve hot with Thin Triscuits, or whatever crackers or bread you like.

It doesn’t make a very big serving, so if you are making it for a gathering, I would double the recipe.  And it’s not really a kid-friendly dish, but who cares? Sometimes it’s nice when the kids won’t eat it. More for you!

    I make this all the time and the family loves it! Our grocery store stopped carrying Progresso artichokes and I couldn’t find the recipe anywhere! Thanks for posting this, you saved Thanksgiving! :)
